you actually want to be designing at 760x420 for 800x600 resolutions (if you check Dreamweaver's bottom right corner it lists the dimensions for webpage resoltuions.) I forget what 1024x768 is, but that's in there as well.
If you're just using this as a portfolio to show other design firms, you can be 99% certain that they will be viewing on 1024 or higher. Unless you plan on sending potential freelance clients to the site, I don't think you really need to design for 800x600.
