  There's too much to say here really, I'm from Auckland, but in three weeks you can pretty much drive the whole length of the country and see just about everything.

  North Island:
  - Auckland
  - Taupo
  - Rotorua
  - Gisborne
  - Wellington

  South Island:
  - Marlborough Sounds
  - Abel Tasman National Park
  - Kaikoura
  - Queenstown
  - Te Anau + Milford Sound
  - Fox + Franz Josef Glacier
  - West Coast

  Avoid Christchurch as there's nothing there you won't have already seen in Auckland, just keep driving through to Queenstown. You MUST go to Milford Sound in Fiordland, one of the Natural wonders of the world.
