  What is the official or proper term, if any exists, for the type of iconography used in signage such as road signs. In particular I'm looking for the term to describe an icon of a person.

  You have a rather particular example. The image of the person is a "symbol" for person, however because it is being used to convey people crossing the street it is an "index". In this example, a person walking in the context of driving is an indexical sign for pedestrian crossing.
