It's been years since I had a games console of any sort and I'm completely out of touch with these things.
I'm thinking of getting a PS3 but don't know what setup I should get (there are different ones, right? Different HDs? Remotes? Cameras!? Etc)
Also... must have games. List 'em.

Fallout 3 and red dead.

Uncharted 2
God of War 3
Heavy Rain^ are all amazing "next gen" games. Fallout 3 is crazy nerdy hard/slow, but could be your thing if into that.

It depends on what type of games you like, but I've heard great things about Demon Souls

they pretty much listed the best of them, maybe Assassins creed2 and killzone2. But Killzone3 comes out in January, and assassins creed brotherhood is coming out shortly too. Medal of honor comes out in OCT. And GT5 comes out in November.

I needed something light after Red Dead. Downloaded Joe Danger from PSN. Shit is addictive. Plays a bit like Excite Bike.

Uncharted 2 is absolute best, most cinematic experience on any platform or console. You just have to play that game.
God of War 3 is ok.. but being a huge fan of the franchise I felt a bit disappointed. It was grandiose but it lacked something. I don't know.. it just felt it had all the crazy stuff in it but I still didn't feel it as I did God of War 1 and 2.
I would actually suggest to you to play the first game that was really awesome on PS3 when it came out.. Heavenly Sword.. It's a short and beautiful game with awesome story. I still play it from time to time all over again.
PS3 Media Server is great for streaming to PS3 no doubt about that. I even built a cool 3d cover art generator you can use with PS3 Media Server so your movie collections/rips look cool. You can use it online here:

Modern Warfare 2 and Battlefield Bad Company 2 are good shooters.. but you can always try huge 256 player shooter MAG or Killzone 2.. Killzone 2 has a good singleplayer experience and the graphics are stunning.
But I say.. your first experiences should be Heavenly Sword, Uncharted 2, God of War 3 and for longer games with open world feel Red Dead Redemption is indeed cool (just survive the first awesomely boring couple of hours - until you get to Mexico). Assasins Creed 2 is absolutely gorgeous but slower paced.
