Why do I need more than one object to align something in Photoshop?
Why don't they have something like the Illustrator align panel where I can align an object to the canvas?

You can align it to a selection. So just select the layer you want, do a select all, then use the Align to Selection option under Layer.

Because Adobe works in mysterious ways.
You only need faith to align stuff.

Because Adobe is a joke of a company. Shit can't even align to the canvas without a workaround. Even fucking Powerpoint can align to the canvas

I don't think any Adobe product aligns to canvas, but I might be wrong. Usually objects will snap align to the canvas just by dragging. Or you can type in your page boundaries for the most accurate alignment.
