Do it in Illustrator instead?

Saving from photoshop, make sure you flatten the image, then save with some kinda compression... even if your pdf in photoshop only has 1 layer, but its actually a layer and not a background layer, the filesize is way bigger. Also make sure "preserve photoshop editing capabilities" is not checked, as that also stores extra info so you can open it up and edit it easier. let me know if any of that helps, I have more tips but I want to see if that actually does it for you first.

Realizing that only solves one of your issues... but what about placing your signature into the PDF itself inside acrobat. You can make an EPS of your signature and copy/paste it into the contract in acrobat, place it in the right spot and save, done. :)

I was trying to find something similar, but for my clients. An easy way for them to sign my PDF contract and email it back to me. Paper and Fax machines suck.

In a court of law does "Typing your name on the dotted line" count as a signature? I would assume it would, otherwise would License Agreements (ie HTML Radio Buttons / Checkmarks) hold up in court?

The LONG method would include creating a custom font where one of the modifier keys types your signature (you add the vector of it into the font) and then you simply TYPE it into the PDF using Acrobat Pro.

What I've done is use Illustrator. I scan my signature and then save it out as a JPEG with a white background, tweak the brightness etc. Then I open the PDF page in Illustrator, place the signature, scale it appropriately, and then set its blend mode to multiply. Then fill out the rest of the stuff using the type tool.
The new Preview in Lion has signature support, which is essentially the same thing as above. However, if the PDF wasn't made correctly to type into for the other stuff, it prolly makes sense to just do it in Illy.
