Widgets:
Beautiful Widgets - this takes up the middle of my home screen - has time and weather, I also use the vibrate widget from it on my right side screen to switch between vibrate and sound with one touch)
BatteryLife - shows a lot more info than the normal battery icon like percentage, temp, actual charge in mV etc.Apps:
Astro - file browser/manager for the SD card.
Backgrounds - bunch of wallpaper choices.
Car Locator - this is awesome for parking in a huge lot like at a stadium.
Dolphin Browser - browser replacement that adds iPhone style pinch and zoom, tabbed browsing etc.
Google Sky Map - this is the one app I'd use to wow people with the phone, at least at night. Point it up at the sky and it shows you what stars/planets/constellations etc you're seeing.
Handcent SMS - awesome replacement for the default texting app.
KeyRing - stores retail store "rewards" cards so you don't have to pull out the physical card, they can just scan the phone.
LED Flashlight - uses the camera flash LED as a flashlight.
Live Scores - best sports score app imo.
Notes - notepad type thing
Pandora - internet radio stations based on the artists you tell it you like.
ShackDroid - this one is pretty obvious
Shazam - this is another app to use for wowing people - hold it up to music that's playing and it'll tell you the artist and song title.
Startup Auditor - allows you to stop some of the useless apps from even loading, like Corporate Calendar etc.
TasKiller - I prefer this to the other similar programs. Just make sure you add stuff like Gmail and a few of the other built-in apps to the ignore list otherwise things like Gmail push and Market downloading stop working.
The Weather Channel - best weather app imo
Twidroid - best Twitter client at least until the Beautiful Widgets guy releases his
USA Today - best news app on Android currently, hoping CNN ports their iPhone app.

my friend showed me one yesterday on our runyon canyon hike. it's called MyTracks and it tracked our entire hike which was displayed on the map and showed us average speed, altitude, total hike time, etc. he can then upload this with the rest of his hikes/road trips/travels and it'll draw lines all over the globe (i think using google earth). pretty cool.

'Goggles' is pretty amazing - you take a photo and the item is identified and used for a regular Google search.
