Can you mix pantone colour set,
I have a layout with just Pantone Process coated colours, can I then use Pantone Pastel coated in the same document, or would that be like adding a spot colour ?

You can use any pantone ref you want but every new one is a new spot colour. If you don't want it as spot just convert the spot colour to a CMYK reference. You'll still have the colour jusr not as an extra plate.

No worries, converting spot to cmyk is easy and you can do a bunch of em at once, to speed it up.

dont forget though that the cmyk equivilent wont be an exact match to the spot colour when printed!!
