So I have some friends coming to stay with us and its their birthdays.
I want to make some simple tasty food to serve up.
Whats your appy?

Olive spread is good especially with cambozola cheese

make this:
boil water with some vegetable stock.
add frozen peas.
fry bacon bits while the peas are cooking, add some chili or piri-piri to the bacon.
stir polenta into the peas and chuck the bacon in too.
takes less than 10 minutes and is tasty as fuck.

cut up pieces of french bread.
rub olive oil and minced garlic on each piece.
bake in oven until golden.
top with italian roasted peppers and artichoke hearts.enjoy!

get some Carrs Table Water crackers.
cover with creme fraiche.
top with smoked salmon and capers - go easy on the capers (or diced onion if you dont like capers)
they will disappear faster than you can put them on the plate.

buy an 10 pack of hot dogs and an 8 pack of hot dog buns.
boil some water and drop the hot dogs in the water.
while the water is boiling, toast your hot dog buns in the oven or toaster oven. lay the buns out on a large serving tray.
after about 7 minute (or when the ends of the hot dogs look like exploded penis tips) remove the hot dog pot from the stove and strain being sure to drain all the water because nobody likes soggy buns:(
carefully place 1 hot dog into each bun. serve with condiments and dressings on the side:
ketchup
mustard
pickles or relish
onion
cheese
tomato
salt and vinegar chipsthey will love it!

hotdog birthdays are classic!

i always like little pan-seared rissotto cakes topped with half a fried egg (cooled to room temp so it is clean), a dollop of creme fresh and sprinkled with a pinch of fresh minced chives.
risotto should preferably be a clean formaggio or safron for balance.

another, as is beacuse fall is upon us, is cored, peeled, sliced thin, baking dish-arranged, baked apples with cheddar and crumbled sausage.
place only apples in dish and bake ~ 30 min covered with foil.
remove, add rendered-out sausage and cheddar to top and continue baking for another 20-30 minutes at which time add ~ 1/2 cup of chicken stock to pan.
bake an additional 10 min, remove and let cool.
serve w/ spoon on a water cracker w/ a dollop of sweet-chili paste/sour creme if so desired....

no, just cook them untill over easy. on cooking on the counter, they will stiffen up enough to be slightly congealed, yet soft and warm. e

you can't go wrong with grilled chicken wings. Don't cut em' up either, grill the whole thing, weird nub thing and all. cook with indirect heat (grill hot on one side, wings on non-hot side). baste often with mixture of teriyaki sauce with a little butter* (*makes em' real shiny). Last minute turn on the heat on the chicken side of the grill to crisp 'em up a bit (watch them closely, that teriyaki will burn). remove to platter with a sprig of parsely on the side. The whole wing presents better than the cut up ones. =)

Toasted ravioli...
Buy prepackaged rav in the store (any kind will do). Dip in beated eggs, the toss in flour and bread crumbs. Next, drop them into hot oil and wait for them to rise and brown. You can also try them in the oven instead of frying them.
Serve with marinara sauce.
OR
You can always buy dried apricots and wrap in prosciutto. Or you can use breadsticks or asparagus.

this is a great mini turkey meatball recipe - it takes some time, but well worth it. My friends make me make these twice a month.

quesadillas - super easy and always a major hit...dare I say homerun!
on a hot skillet throw down a fresh tortilla and some grated cheese, diced tomatoes, and avocado slices. You can use other veggies like onions or bell pepper if you're in the mood. Add some hot sauce/salsa to taste and some pre-cooked chicken strips if you got any. Even deli cold-cut slices work well.
When everything starts to melt together fold it in half and let it grill a bit longer.
if you use american cheese or velveeta I will come over to punch you in the face.

sesame shrimp skewers
get a few pounds of 31-36 raw shrimp
clean them butterfly them sweker them with pieces of chinese cut green onions, grill them, when they are almost done baste them with a bit of sesame oil on each skewer. sprinkle them with toasted sesame seeds last minute and serve.
This is what I am doing tomorrow afternoon. :D
