is there a way in photoshop to get an accurate bw photo conversion instead of bloody grayscaling it? or do i need a 3rd party filter?

turn down the colour button on your monitor.

i like to put a layer of black over everything and change the transparency setting to hue. or i use the black/white gradient map.

what do you mean by "accurate"?
punchier? more dynamic?

sometimes I grayscale them, duplicate the layer, set that layer to "soft light" and then use high pass with the slider set the wholew way to the right to make the image punchier

Channel mixer is the best solution. That being said, it really depends on the type of BW film you are trying to emulate. Here is a list of some Channel mixer values as they correspond to various bw film types...

hands down the channel mixer
cs3's channel mixer is going to be expanded just for this reason

CS3 has a nice "convert to Black & white" filter in the adjustments menu. Gives very nice results.
