in CS you can find it under Print > setup > options > placement...

if not in cs you can move the page tiling box around to orient the biz card however you like.

Did you make sure to go to document set-up from the file menu, an set document size to 8.5 x 11?
- If that doesn't work, make a invisible 8.5x11 box arround your card. (no fill color/no stroke). That's a trick that always works well.

can't you just drag them to the center of the work area?
