I'll second La Paz or Todos Santos. If you go to La Paz, check out the boat tour that takes you to La Isla Espiritu Santu - it's beautiful, and you may get to swim with sea lions and whale sharks. It's also a good day trip from Todos Santos.
Be warned: Todos Santos beaches are kind of hidden, and tend to have rather large surf.
If you go to Todos Santos, skip the Hotel California and eat at the taco/torta shack a couple blocks up the road and the ceviche corner (seriously, it's a couple guys, a few coolers of ceviche, and a gravel lot with some tables and chairs just outside of the main street area).
