Im planning to go vegan for lunch at work in an effort to take off some of the weight ive ploughed on in 2016
anyone know any good easy to knock up recipies that 1. dont cost loads to make, b can be made in a microwave, c. are low carb and d dont contain mushrooms, onions, courgette, tomatos, peppers

just eat a healthy balanced diet and not too much of it - you don't need to go vegan to lose weight lol.

First, vegan doesn't necessarily lead to losing weight.
And everything vegan it's going to be basically carbs. You can eat avocado and nuts, which are rich in fat, or legumes that have protein — most of them only if combined with cereal.
But unless you want to drink vegetal oil, forget about eating vegan and low carb.

- That doesn't make it low carb, just low calories. If you eat just 100kcal a day, but 80% are carbs, still not qualifies as low carb.sr_rosa

Find a great Indian place or start learning Indian recipes. Those guys are killer at vegetarian and vegan foods. Lentils and potatoes and chickpeas and tons of flavor. Maybe not your thing but it's a good place to start if you're adventurous.

All my vegan recommendations definitely contain onions and carbs. But I'm sure there are other things you can sautee or slow-cook and bring to work to microwave.
- Thai/Vietnamese dishes might meet some of your requirements.
- Qunioa, bean, or chickpea salads containing the ingredients of your choosing could be good
- Vegan Sandwiches on wraps, flatbread or sprouted bread might lower your carb count, and you could put whatever you want on them. i'm been mostly vegan for almost 4 months now.. i like it! i'm moving towards some occasional seafood and i will eat honey. however no more dairy or meats for me

After reading this thread I went to the grocery store and got ingredients to turn this leftover rice into really good breakfast fried rice. Totally vegan, with zucchini, carrots, garlic, ginger, scallions and all kinds of good flavor. I highly recommend it.
Tonight I'm making grilled salmon over a (vegan) quinoa that I'm preparing with cucumbers, onions, tomatoes and peppers, as well as parsley, mint and a light lemon dressing. Oh yeah.
- Nice - sounds great. Keep reading advice to avoid eating large quantities of quinoa though - it's good in moderation but can cause nasty stomach issues.fadein11
