I am looking for basic instructions to hand off to client on how to manage their WP site. Does anyone know of a good simple manual? Or something of that sort? They will only be updating page content (text/images) for the most part.

I usually prefer to give them a clean and objective dashboard and a limited user (editor). If there's something too complicated, like custom posts, I do some screenshots and that's it.

First, I like using a plugin like adminimize to remove unnecessary elements from the admin side.
Next, I record short tutorial videos on how to accomplish common tasks in the site. I try to focus on the things I anticipate my client will actually do. For example, "How to update the pricing table."
I have a "Support" tab in the admin that lists all the videos. So far, clients love it.

in the past I've used free video screen capture software to record the basic steps and put the video(s) up on vimeo. Clients love stuff like that.

We add step by strep instructions with screenshots using Skitch to add giant arrows pointing to shit and quick screen recordings.
This is somewhat laborious for large sites...

It's pretty darn good. The client gets a bunch of video tutorials right there in the WP dashboard.
I pay for it out of pocket, but it's easily saved me hours of time over the years fielding basic "how-to" questions.
The trick is to teach the client that they need to check those videos first before contacting me :)
