ever feel like there are soooo many kids that "do" graphic design and sooo many are talented...ahhh...saturation.

I think there's a marked difference between being able to create 'cool illustration' (which I think is what you're getting at) and being a graphic design, which is about communication.
There is also a difference between being a student and creating strong work for imaginary briefs, and being a professinal designer and dealing with the challenges of a real brief, clients, budget etc.
The reason I think we are all sometimes less than impressed with what we see in design magazines is because of that struggle to get creative work pushed through. It makes all the difference when some truly great work does make it past a client, then it really stands out.
I don't believe in 'talent' in the sense of being naturally good at something. Everything takes work, education, practice and experience. I just hope that hot-shot kids continue to grow and develop into good communicators and not just style junkies.
