price for packaging

I'm new to the area of packaging, so i'm a little lost on how to price a new project. Working with a client on redesigning a set of ice cream pints. They have a new logo already, but need a complete redesign with the new logo and they are completely open with design.

Right now they need a packaging system for 2 flavors within the brand. More flavors will be rolled out in the future down the line. Need to set up a system (for the packaging, as well as the pricing so i can account for those later.)

Also good to know - they are beginning to target consumers - the ice cream was previously only sold to other businesses. So there are alot of factors in place as they want to retain current customers and not confuse them, but also attract new customers.

Any good resources or suggestions? Is it worth asking for a percentage of sales in the future, or stock? Who knows how well the ice cream can sell depending on how well the product is marketed, and i dont want to sell myself short by underestimating what will happen down the line.
